Basmati "Chipotle" Rice | Recipe | Quick & Easy

Rice is a nice side dish, but if you don't do a little prep work, it can be bland which leads to adding lots of butter or soy sauce.  At least that was the case in my family.  If you treat Basmati rice like risotto and cook the rice a minute or two before adding the water, it absorbs the flavors and cuts down on the need for excess fat later. 

This is a pseudo copy-cat Chipotle rice recipe.  Mr. Stranded doesn't like cilantro which is why the picture below barely has any in it.  But if you put a nice handful, it will have all those delicious, fresh flavors that lime and cilantro bring.


Basmati "Chipotle" Rice Recipe
Yields: 1-1/2 cups cooked rice

1 cup Basmati rice
1 Tbsp butter
Juice of 2 limes
2 cups water
handful of cilantro
Salt, to taste

1. Melt butter over Medium heat in a medium skillet.  Add rice, stirring occasionally until opaque.
2. Add lime juice and stir to incorporate.
3. Add water, increase heat to High and bring to a boil.  Once boiling, reduce heat to Low, cover and simmer for 10-15 minutes until all water is incorporated.
4. Remove from flame.  Fluff with a fork and let stand 1-2 minutes.
5. Add cilantro and salt.  Stir well and serve.
