Braised Cabbage | Recipe | St. Patrick's Day Dinner

Cabbage is under appreciated.  This inexpensive, leafy vegetable has many health benefits.  It's high in Vitamin C and Calcium, helps ailments such as constipation, headache, excess weight gain and serves as an anti-inflammatory.  Cabbage is extremely low in calories and high in fiber.

This braised cabbage is a wonderful side dish and pairs perfectly with Corned Beef Brisket.

Braised Cabbage Recipe
Yields: 6-8 servings

1 medium green cabbage, quartered lengthwise
1 Tbsp olive oil
1 large Spanish onion, minced
3 cloves garlic, 2 squashed and 1 minced
1/2 c vinegar
Salt and Pepper

1. Bring a large soup pot of water to a boil.  Season with salt and add cabbage.  Bring back to a boil and cook cabbage until slightly tender, about 5 minutes.  A fork should be able to pierce it, but still encounter some resistance.
2. Drain cabbage and rinse under cold water to stop cooking process.
3. Heat oil in a large Simmer and Saute pan over Medium heat.  Add onion and crushed garlic; saute until tender and translucent, about 4 minutes.  Add minced garlic and stir, about 1 minute.
4. In the meantime, slice cabbage horizontally, about 3/4" thick.  Add cabbage and vinegar.  Reduce heat to Medium-Low and cover with a lid.  Finish cooking cabbage in the vinegar, another 5-10 minutes.
5. Season with salt and pepper.
