Broccoli with Kalamata Olives | Recipe | Quick & Easy

Broccoli is another vegetable high in Vitamins A, C and K.  This power food is also high in fiber and has anti-cancer properties.  It's a healthy side dish that's easy to prepare and delicious to eat.

Broccoli with Kalamata Olives Recipe
Yields: 4 servings

1 bunch broccoli, about 2-3 large heads
1 Tbsp olive oil
4 cloves garlic, minced
2 Tbsp plain bread crumbs
5-10 kalamata olives, quartered
Salt and Pepper

1. Peel stems of broccoli.  Cut broccoli florets and stems into bite-sized pieces.
2. Bring a large pot of water to a boil.  Season water with salt.  Add broccoli and boil for 4 minutes, or until just tender.  Drain and shock with cold water.
3. Heat oil in a medium skillet over Medium-Low heat.  Add garlic and stir constantly for 1 minute.  Add broccoli and heat through.
4. Remove from heat. Stir in bread crumbs and olives.  Season with salt and pepper.
