Garlic and Parsley Mushrooms | Recipe | Quick and Easy

These mushrooms are very easy to make.  It makes a great side dish and hold up well when made ahead.  A couple tips on cooking mushrooms:
  • Do not wash mushrooms in water.  They will absorb the water and turn brown.  You should use a wet paper towel to remove dirt.  Yes, this will take longer, but your mushrooms will be better as a result.
  • Be careful not to add too much salt.  The salt is neccessary and helps extract water from the mushrooms, but a little goes a long way. 
Garlic and Parsley Mushrooms Recipe
Yields: 3 servings

8 oz whole white mushrooms, quartered
4 cloves garlic, minced
1/4 c white wine
1/4 c Tbsp parsley, chopped
salt and pepper

1. Heat oil over Medium heat.  Add mushrooms and garlic.  Season with salt and pepper.  Cook, stirring occasionally, until mushrooms have released their liquid.
2. Add wine.  Raise heat to High and boil until liquid has evaporated.  Lower heat to Medium-Low and add parsely.  Stir and cook for 1-2 minutes.
3. Remove from heat and serve.
