Green Olive Tapenade | Recipe | Quick Hors D'Ouevre

Tapenade can often be high in calories.  This is a lower-calorie version that's light on fat and loaded with flavor.  It's perfect finger food to eat while enjoying a nice glass of wine.

Green Olive Tapenade
Yields: 1-3/4 c

2 Tbsp olive oil
1 Tbsp water
1 Tbsp lemon juice
2 anchovy filets
1 garlic clove
1/2 tsp pepper
Pinch of sugar
2 c pimiento-stuffed green olives
Multi-grain baguette, cut into 1/2" slices

1. In a food processor, combine olive oil through sugar; cover and process until smooth.
2. Add olives; cover and pulse until coarsely chopped.
3. Place baguette slices on baking tray and toast under a broiler, 2 minutes per side or until lightly browned.
4. Spoon tapenade onto baguette slices and serve.
