Guinness Brownies | Recipes | St. Patrick's Day Dinner

These brownies are incredibly rich and decadent.  The Guinness acts like coffee, intensifying the flavor of the chocolate.  The Guinness should be room temperature before adding to the batter and should not contain foam.  These brownies are a nice treat to end your St. Patrick's Day celebration.

Guinness Brownies Recipe
Yields: approx 12-24 brownies

1 c all-purpose flour
3/4 c unsweetened cocoa powder
1/4 tsp salt
6 Tbsp unsalted butter, cut into cubes
8 oz dark bittersweet chocolate, chopped of chips
3/4 c white chocolate chips
4 large eggs, at room temperature
1 c sugar
1-1/4 c Guinness Extra Stout Beer, room temperature and foam removed
1 c semi-sweet chocolate chips
1/8 c confectioners' sugar (about)
Pistachio gelato
Mint leaves for garnish
1. Preheat oven to 375 degrees F. Grease a 9x13 baking pan.
2. In a medium bowl, whisk together flour, cocoa powder and salt until combined.  Set aside.
3. Melt butter, bittersweet chocolate and white chocolate chips in a double-broiler over very low heat, stirring constantly until melted.  Remove from heat.
4. In the bowl of a stand mixer, beat eggs and sugar on high speed until light and fluffy, approx 3 minutes. 
5. Add melted chocolate mixture, beating on medium speed until combined.
6. Add reserved flour mixture into the chocolate mixture, mix on low speed until fully incorporated.
7. Mix in Guinness on medium speed; the batter will appeared thinned.  Drop semisweet chocolate chips evenly on top of the batter in the bowl of the stand mixer.
8. Pour batter into prepared baking pan.  Bake 30-40 minutes on the center rack in the oven, until a toothpick inserted in the center comes out almost clean.
9. If serving later, let the brownies cool, uncovered, to room temperature.  Cover with plastic wrap. 
10. When ready to serve, place brownies in a 250 degree oven for 15 minutes to warm.  Cut brownies to desired size.  These brownies are very rich and a small piece is usually sufficient. 
11. Place a brownie on plate and dust with confectioner's sugar.  Place a scoop of pistachio gelato on top and add a mint leaf for garnish.
