Horseradish Red Potatoes | Recipe | Potato Salad

I had a hankering for horseradish tonight, so made up dressing for a potato salad.  The horseradish could be detected, but it was not over-powering at all.  I may even add a little more next time.  This was a super quick and easy side dish.

Horseradish Red Potato Salad Recipe
Yields: 2-4 servings

5 red potaotes, cut into eighths
1/2 Tbsp prepared horseradish
1 Tbsp Dijon mustard
1 Tbsp olive oil
1-1/2 Tbsp red wine vinegar
1 Tbsp parsley, chopped
salt and pepper

1. Bring a large pot of water to a boil. Season with salt and add potatoes. Return to a boil and cook 15 minutes or until potatoes are tender. Drain and place in a large bowl.
2. In the meantime, whisk together horseradish through parsley.  Pour over drained potatoes. Season with salt and pepper.  Toss well to combine.
3. Serve hot or at room temperature.
