Mango Salsa | Recipe | Quick & Easy

I am a big mango fan.  I mean big.  Whenever the grocery store is having a mango special, I scoop up as many as I can.  They're so good by themselves, I normally just eat one after dinner.  But every so often, I like to spice things up a bit and make a mango salsa.  This salsa is great with chips or as an accompaniment to chicken and fish.

Mango Salsa Recipe
Yields: 3 c

1 large mango, peeled, pitted and diced
1/2 large cucumber, peeled, seeded and diced
1/2 red bell pepper, diced
2 Tbsp red onion, diced
1/2 lemon, juiced
1/2 cilantro, chopped
salt and pepper, to taste

1. Combine all ingredients in a bowl. Add salt and pepper to taste.

This salsa is the perfect pairing  for Pan-Fried Flounder.
