Mushroom Duxelles | Recipe | Elegant Dinner Party Menu

Mushroom Duxelles is a mixture of minced mushrooms, shallots, and garlic.  It is used in stuffings, sauces, garnishes, and most notably, Beef Wellington.  Mushroom Duxelles can also be wrapped in a pastry puff and served as a savory tart. 

Mushroom Duxelles Recipe
Yields: enough for 4 Individual Beef Wellingtons

8 oz morels or any wild mushrooms, minced
1 Tbsp unsalted butter
2 Tbsp finely chopped shallots, approx 1 large
1/2 tsp minced garlic, approx 2 medium cloves
1/4 tsp salt
1/8 tsp pepper
2-1/2 Tbsp dry white wine

1. Heat butter in a medium skillet over Medium-High heat.
2. Add the shallots and garlic.  Cook, stirring, for 1 minute.
3. Add the mushrooms, salt, and pepper, reduce the heat to Medium, and cook, stirring, until the liquid has evaporated and the mushrooms begin to caramelize, about 10 minutes
4. Add the wine and cook, stirring to deglaze the pan, until all the liquid has evaporated.
5. Remove from heat and let cool before using.
