Oven-Roasted Tomatoes | Recipe | Elegant Dinner Party Menu

Oven-roasted tomatoes can be a sweet addition to a savory meal.  This is a light, delicate side dish and adds a splash color to any plate.  These tomatoes are healthy and super quick to prepare.

Oven-Roasted Tomatoes Recipe
Yields: 8 halves

4 Roma tomatoes, vine-ripened if possible
2 medium cloves garlic, crushed
2 Tbsp olive oil
1 tsp fresh chopped thyme
1 tsp fresh chopped parsley
Salt and pepper to taste

1. Preheat oven to 425 degrees F.
2. Combine oil and garlic in a small bowl.
3. Cut tomatoes in half lengthwise.  Remove cores and seeds.
4. Place tomatoes halves, cut side up, on a cookie sheet lined with tin foil.
5. Brush oil mixtures over tomatoes.  Sprinkle tomatoes with thyme, parsley, salt and pepper.
6. Bake in oven for 20-25 minutes. If additional time is needed, finish off in the broiler for an additional 3-5 minutes.
7. Serve hot or allow to cool on a tray

Tips:
  • If purchasing tomatoes, remove them from any plastic packaging and store them in a shallow bowl, not in the refrigerator.  This will keep them flavorful.
  • Tomatoes can be prepared 24-hours in advance.  Cover with plastic wrap and store in the refrigerator.
