Pan-Fried Flounder | Recipe | Quick & Easy

Tonight was Flounder Night at the Stranded household.  Mr. Stranded had a special request for pan-fried flounder, so I reached for the House-Autry breader.  This breader cooks up light, crispy and tasty, and gives white fish an irresistable flavor.

For this recipe, I used the Medium Hot Breader and served the flounder with a Mango Salsa.  The contrast of spicy flounder and sweet mango was a delight for the pallet.

Pan-Fried Flounder Recipe
Yields: 2 servings

4 flounder fillets, 1 lb total
1/2 c plain soy milk or low-fat milk
1/2 c House-Autry Medium Hot Breader
2 Tbsp unsalted butter

1. Place fillets in a shallow bowl and cover with milk.  Let soak for 15 minutes.
2. Remove fillets from milk.  Pat dry.  Dredge through breader and shake off any excess.
3. Melt butter in a large stainless pan over Medium heat.  When butter begins to foam, add fillets and cook for 2-1/2 minutes per side.  If your fillets are thick, increase cooking time and cook until fillets are white.
4. Transfer fillets to plate and enjoy with mango chutney.
