Tonight was Flounder Night at the Stranded household. Mr. Stranded had a special request for pan-fried flounder, so I reached for the House-Autry breader. This breader cooks up light, crispy and tasty, and gives white fish an irresistable flavor.
For this recipe, I used the Medium Hot Breader and served the flounder with a Mango Salsa. The contrast of spicy flounder and sweet mango was a delight for the pallet.
