Pistachio-Apricot Canapes | Recipe | Quick Hors D'oeuvre

These tasty canapes are a lesson in dichotomy: salty-sweet, soft-hard, orange-green.  So, maybe that last one is a stretch...But the canapes are a simple idea with such contrasting flavors and textures.  These are easy to make and enjoyable to eat.

Pistachio-Apricot Canapes Recipe
Yields: 20 canapes

20 dried apricots
1/4 c Cashel cheese (or blue cheese)
1/4 c chopped salted pistachios
1 tsp honey + more for drizzling

1. In a bowl, combine the cheese, pistachios and honey, until it sticks together.
2. Arrange apricots on a serving platter.  Form a ball about the size of a grape and place on top of each apricot.
3.  Drizzle apricots with honey.
