String Beans with Tomatoes and Olives | Recipe | Warm String Beans

Now that I've opened a jar of Kalamata olives, I've been adding them in veggie recipes left and right.  I love the distinctive flavor it adds to a dish.  These green beans can be made with or without the olives, but my vote is to include the olives.

String Beans with Tomatoes and Olives Recipe
Yields: 4-6 servings

1 lb green beans, trimmed
1 Tbsp olive oil
1/2 Vidalia onion, sliced
2 cloves garlic, minced
4 tomatoes, diced
20 Kalamata olives, sliced
salt and pepper

1. Bring a large pot of water to a boil; season with salt.  Add string beans and cook until just tender (not tender-crisp), about 6-8 minutes.  Drain and rinse under cold water.
2. In the meantime, heat oil in a medium skillet over Medium-High heat.  Saute onions until tender.  Add garlic and stir, 1 minute.  Add tomatoes and cook, 2-3 minutes.
3. Lower heat to Medium-Low and add green beans and kalamata olives.  Season with salt and pepper.  Cook until beans are heated through.
