Waldorf Chicken Salad Recipe | Recipe | Healthy Lunch

One of my favorite healthy sandwiches is Waldorf Chicken Salad.  It has lean protein, fruits and vegetables.  How can you go wrong?! 

Waldorf Chicken Salad Recipe
Yields: 4-5 servings

1 boneless, skinless chicken breast half
chicken broth, about 4 c
1 bay leaf
3/4 cup sliced celery, plus 1 stalk
3/4 cup grapes, cut in half
1 Granny Smith apple, diced
1 Tbsp lemon juice
1/2 cup walnuts, chopped and toasted
1/4 cup golden raisins
3 Tbsp low-fat plain or greek yogurt
2 Tbsp light mayonaisse
Salt and Pepper to taste


To Poach the Chicken Breast
1. Place chicken breast at the bottom of a medium pot.  Cover with chicken broth so that the top of the breast is just covered.  If you don't have enough chicken broth, use water and a boullion, or just water.  Add celery stalk, cut up into large chunks, bay leaf and season with salt and pepper. 
2. Bring to a boil; Immediately reduce heat to low and simmer for 10 minutes with cover slightly off center.
3. Remove from heat and fit cover tightly over pot.  Let sit for 15 minutes.
4. Remove chicken from poaching liquid.  Chicken should be cooked through with no signs of pink.  Cut up into small chunks.  Set aside to cool.  Discard poaching liquid.


To Make Salad
1. Combine celery, grapes, and apple.  Add lemon juice and mix.  The lemon juice will prevent the apple from turning color.
2. Add walnuts, raisins and chicken.  Toss to combine.
3. Mix in yogurt and mayonaisse until salad is completely coated.
4.  Taste and season with salt and pepper as needed.

Saving this one for when I move - looks like a really yummy healthy lunch.

Also - saving the Guinness brownies for when I get my huge upstate apartment and host a game night. I'm thinking they'd be perfect?
