Avocado Citrus Salad | Recipe | Meyer Lemon Citrus Vinaigrette

I really like the variety of colors, textures and flavors in this salad.  The avocado shells are clearly just for decoration, but I think it adds a certain something.  The recipe only calls for half an avocado.  How to get the other 5 shells you ask?  Make guacamole or better yet, try these Mango-Avocado Bites.  If preparing the shells earlier in the day, be sure to squeeze some lemon juice into them so they don't turn brown.

Avocado Citrus Salad Recipe with Meyer Lemon Vinaigrette
Yields: 6 servings

2 c chopped Romaine hearts
1/2 yellow pepper, chopped
10 cherry tomatoes, halved
1/2 grapefruit, seeds removed and cut into pieces
1/2 avocado, diced
Meyer Lemon Citrus Vinaigrette (recipe below)
6 avocado shells (optional)
2 Tbsp chives (optional)

1. Combine Romaine hearts, yellow pepper, cherry tomatoes, grapefruit and avocado is a large bowl. 
2. Drizzle with Meyer Lemon Citrus Vinaigrette and toss well.  Taste; add more dressing if needed.
3. Fill avocado shells with salad and place on salad plate.  Garnish with chopped chives.


For Meyer Lemon Citrus Vinaigrette
1 Tbsp Meyer lemon zest
2 tsp Meyer lemon juice
1 large shallot, minced
2 Tbsp Champagne vinegar
1/8 tsp salt
5 Tbsp olive oil
2 Tbsp fresh chopped parsley
1/8 tsp pepper

1. Combine lemon zest, lemon juice, shallot, vinegar and salt in a small bowl.  Let stand for 15 minutes.
2. Slowly whisk in oil in a steady stream.  Add parsley and pepper.
