Dark-Chocolate Strawberries | Recipe | Quick & Easy

Chocolate covered strawberries are a wonderful dessert accompaniment.  Using dark chocolate is the healthier choice since dark chocolate provides antioxidants and lowers blood pressure.  They are very easy and quick to make, only requiring about 25 minutes of hands-on time.  While these can be made in advance, they are best when prepared the same day.  Cover with plastic wrap and store at room temperature until ready to serve.  Refrigeration can cause the chocolate to separate from the strawberry and excess moisture to form. 

Dark-Chocolate Covered Strawberries Recipe
Yields: approx 25 strawberries

1 pint ripe strawberries
10 oz dark chocolate chips
5 oz white chocolate chips

1. Wash strawberries and thoroughly pat dry.
2. Melt dark chocolate chips in a double-broiler.  To do this, place a small amount of water in a pot and simmer.  Place a bowl that fits securely over the pot on the pot.  The heat from the pot should reach the bowl, but the water should not.  Place the dark chocolate chips into the bowl and stir with a rubber spatula until all of the chips are melted.
3. Holding the strawberry stem, dip strawberry into the chocolate and rotate until completely coated.  Lift and let excess chocolate drip off.  Place strawberry on a piece of parchment paper.  Repeat with remaining strawberries.
4. Melt white chocolate in a double-broiler.  Pour chocolate in a small squeeze bottle.  Squeeze white chocolate in a thin, even line over strawberries.  If you don't have a squeeze bottle, dip a fork into the white chocolate and drizzle over strawberries.
5. Let strawberries cool completely at room temperature.  Cover with plastic wrap until ready to serve.
