Herbed Breakfast Potatoes | Recipe | Home Fries

Breakfast potatoes are so simple to make and are a welcomed addition to any breakfast.  Pop them in the oven and go about the rest of your cooking.  I like to use chicken fat rendered from oven stuffer roasters.  The fat already has a wonderful herbed flavor to it, but I also like to supplement it with a little fresh thyme.  If you don't have chicken fat, use olive oil and bump until the herbs.

Herbed Breakfast Potatoes Recipe
Yields: 6-8 servings

3 lbs red potatoes, diced
1 large sweet onion, diced
1 green pepper, diced
1 Tbsp chicken fat or olive oil
2 tsp fresh thyme, chopped
salt and pepper

1. Preheat oven to 425 degrees F.  Line two large rimmed baking sheets with Silpat or parchment paper.
2. Combine potatoes, onion, green pepper, chicken fat, thyme and rosemary in a large bowl.  Generously season with salt and pepper.  Toss well to combine. 
3. Spread potatoes evenly in a single layer on baking sheets.  Place in oven and roast for 40-50 minutes.
