Prosciutto and Strawberry Canapés | Recipe | Hors D'oeuvre

Prosciutto, strawberries and mint - can you think of a more perfect combo?  I paired this with mascarpone, a sweet triple-cream cheese.  Stacked on a puff pastry, it's a refreshing and delicious bite.

As mentioned in a prior post, thinly sliced prosciutto is usually placed between sheets of waxed paper.  I suggest keeping the piece of prosciutto on the waxed paper when peeling apart the slices, and slice through the prosciutto and waxed paper lengthwise to create the thin slices.  It's tougher to slice the prosciutto once it's been separated from the waxed paper.

Prosciutto and Strawberry Canapé Recipe
Yields: approx 12 canapés

1 sheet puff pastry
6 slices prosciutto, cut in half lengthwise
12 small strawberries, stems removed
3 oz mascarpone cheese
1 Tbsp chopped mint + 12 leaves

1. Preheat oven to 400 degrees F. Roll out pastry puff to approx 8x10".  Using a 2-1/4" biscuit cutter, cut puff pastry into rounds.  Cook 15 minutes or until pastry has puffed.  Let cool.
2. Mix together cheese and chopped mint.  Spread about a Tbsp of cheese mixture on each pastry round. 
3. Place one strawberry and one mint leaf standing upright on each pastry.  Take one strip of prosciutto and layer in a semi-circle around strawberry and mint.  Place on a platter and serve.
