Cauliflower is yet another vegetable low in calories, but high in fiber and Vitamins C and K. Boiling or steaming cauliflower can leave the florets soggy, so the better way to prepare this vegetable is to roast or saute it. This easy side dish is so simple and healthy. If you already have the oven on, be sure to throw these in as well.
Roasted Cauliflower Recipe
Yields: 2-4 servings
1/2 head cauliflower, cored and separated into florets
1 garlic clove, minced
1 Tbsp olive oil
1/2 tsp salt
1/4 tsp pepper
1. Preheat oven to 400 degrees F.
2. Combine cauliflower and garlic on a baking sheet lined with a Silpat or tin foil. Drizzle oil over each floret. Sprinkle with salt and pepper.
3. Roast, uncovered, for 30 minutes. Florets should be lightly browned. Test for doneness by piercing with a fork.
