Black Bean and Corn Salsa | Recipe | Mexican Bean Salsa

One of my amazing girlfriends, who helped me plan and get ready for our Cinco de Mayo party, made this salsa and was nice enough to share the recipe.  In one word, it was incredible!  The textures and flavors were phenomenal.  It is delicious not only as a salsa with chips, but also makes a great addition to tacos. 

Thank you to my wonderful friend for introducing this delicious salsa to my life!  This recipe is a keeper!

Black Bean and Corn Salsa Recipe
Yields: 8 servings

1 c chopped tomatoes
1 can drained and rinsed black beans
1 can sweet corn, drained
1/2 c cilantro, chopped
1/4 c red onion, chopped
1 green onion, chopped
1 firm avocado, diced
1 can diced black olives, drained
pinch red pepper flakes
1/3 c lime juice
1 tsp cumin


1. In a large bowl, combine all ingredients and mix well.  Refrigerate until serving.
