Carne Asada | Recipe | Grilled Skirt Steak

Carne asada means "grilled meat."  This basic lime marinade is all that's needed to make this meat perfect for tacos or salads.  I'm so excited now that grill season has finally hit Cleveland!  More time outside and less time washing pots and pans.

Carne Asada Recipe
Yields: 6-8 servings

3 lb skirt steak
3 Tbsp vegetable oil, divided
3 Tbsp coarse salt, divided
3 tsp ground pepper, divided
2 limes

1. Lay meat out on a work surface.  Drizzle half the oil on one side.  Sprinkle with half the salt and pepper.  Squeeze one lime over over meat.  Flip and repeat with remaining ingredients.
2. Cut meat into 5-6 equal pieces and and place in an air-tight container.  Let meat marinate overnight.
3. Preheat the grill over Medium-High heat.  Add meat and cook, 2-4 minutes per side, until Medium-Rare. 
4. If desired, cut meat against the grain into thin slices.  Serve immediately.

This is making my mouth water - I am in beef-deprived India and am craving steak! Will most definitely be making this when I get home. Love the blog!
