Spicy Shredded Chicken | Recipe | Chicken for Tacos

I had no intention of making shredded chicken for our Cinco de Mayo party.  But I opened the fridge the morning of only to discover a roasting chicken that I never got around to cooking earlier in the week.  Not wanting it to go to waste, I figured one extra dish wouldn't hurt and spicy shredded chicken would be perfect for our Taco Bar.

I think the mixture of white meat and dark meat is important.  I removed the skin before boiling, but keep the meat on the bones.  Bones add to the flavor, but more importantly, it's much easier to remove the meat from the bone once the meat is cooked.  It will fall right off.

Serve along with taco shells, shredded cheese, sour cream, Mexican Rice, beans, grilled onions, and Pico de Gallo.

Spicy Shredded Chicken Recipe
Yields: 4 c shredded chicken

For the Chicken:
2 lbs chicken, mix of white and dark meat, skin removed
8 c water
5 cloves garlic, crushed
1 Tbsp salt

For the Sauce:
1 Tbsp butter
1 8 oz can tomato sauce
1/2 yellow onion, chopped
5 cloves garlic, chopped
1 tsp salt
1/2 bell pepper, any color
1 jalapeno, seeded
1 Tbsp lime juice
1 handful cilantro
1 tsp chile powder
1/2 tsp cumin
dash paprika
dash garlic powder
dash red pepper flakes
dash oregano
salt and pepper

1. Place chicken, water, garlic and salt in a large pot.  Bring to a boil.  Lower heat and continue to boil 35 minutes, with lid slightly off center.
2. In the meantime, prepare the sauce.  In a large skillet, melt 1 Tbsp butter.  Add tomato sauce, onion, garlic and 1 tsp salt, and bring to a boil.  Reduce heat and simmer for 5 minutes.
3. Remove sauce from heat and allow to cool slightly.  Place sauce in a blender.  Add remaining ingredients, bell pepper through oregano.  Blend until smooth. Season with salt and pepper to taste.
5. When chicken has finished boiling, remove from water and let cool enough to be handled.  Using your fingers, shred the chicken.  Discard any bones.
6. Combine chicken and sauce in a large bowl; serve warm.
