Cucumber and Red Onion Salad | Recipe | Refreshing Cucumber Salad

Now that Mr. Stranded and I are on our Insanity Workout, I've been too tired to cook and don't have much of an appetite.  There have been a few nights I've been tempted to hand him a raw zucchini for dinner and say, "Enjoy!"  I have a feeling that the majority of my posts the next two months will be more about what projects I have going on around the house and not so much about food.  But I will definitely try to get at least one or two recipes up each week.

This cucumber salad is easy, easy, easy and is a refreshing summer side dish.  Salting the cucumbers in Step 1 will help to remove excess water and takes a bit of the bite out of the red onion.  But if you're in a rush, don't worry about it.  Feel free to skip the step - just add 1 tsp of salt to the cucumbers and red onions instead of the 1/2 Tbsp.

Cucumber and Red Onion Salad Recipe
Yields: 2 servings

1 cucumber, cut in half, seeds removed and thinly sliced
1 c red onion, thinly sliced
1/2 Tbsp salt
1 Tbsp white distilled vinegar
1/2 Tbsp olive oil
pinch of sugar
2 Tbsp fresh dill, chopped

1. Place colander over a plate and add cucumbers and onions.  Add salt and mix well.  Let sit for 20 minutes, allowing water to drain. 
2. Press down on the cucumbers and onions, releasing any water.  Rinse well and pat with a paper towel to remove any excess moisture.
3. In a small bowl, combine vinegar, oil, sugar and dill.  Pour over cucumbers and toss to coat.
