Garlicky Broccoli Rabe | Recipes | Broccoletti di Rape

Broccoletti di Rape, or Broccoli Rabe, is one of my dad's favorite dishes.  While I could eat and entire dish of brussel sprouts by myself, my dad could polish off a huge bowl of broccoletti di rape.

This is one of those recipes I do by sight.  I guessed how much oil and garlic I used, but the key to this dish is LOTS of garlic and good quality olive oil.  The bottom of the pan should be covered with chopped garlic and there should be at least an 1/8" of olive oil.

If you've never prepared broccoletti di rape before, simply remove the leaves from the lower, tougher stem.  Cut up the leaves into bite sized pieces trying to keep the florets in tact.  You know how when you cook rice it doubles in size?  Well, this does the opposite.  You'll start out with a huge amount and before you know it, there's only a cups worth.  So be sure to cook at least two bunches if cooking for more than two people.

Garlicky Broccoletti di Rape Recipe
Yields: 6-8 servings

2 bunches Broccoletti di Rape, trimmed
LOTS of minced garlic (about 8-10 large cloves)
Olive oil (about 2-3 Tbsp)
pinch red pepper flakes
salt and pepper

1. Bring a large pot of salted water to a boil.  Parboil broccoletti di rape, about 2 minutes.  Drain well and rinse under cold water to stop the cooking process.  Pat dry with a paper towel.
2. Heat the oil over Medium-Low heat.  Sauté the garlic until fragrant.  Note: the bottom of the pan should be covered with chopped garlic.
3. Add broccoletti and gently fold into garlic and oil.
4. Add salt, pepper and red pepper flakes.
